This is a sister recipe to my waffles. It’s your shortest path to delicious pancakes, made from a pretty versatile batter. It’s a great way to use up leftover bananas and an even better way to start your day.

Prep time: 5 minutes

Cooking time: 10 minutes

Ingredients for 4 medium pancakes

  • 100g all purpose flour
  • 2g salt
  • 125ml milk
  • 3.5g baking powder
  • 1 large banana
  • 2 tablespoons oil/vegan butter to fry on

Optionally add

  • maple syrup topping
  • strawberries or other fruit

Steps

  1. Mash the banana in a bowl.
  2. Sift the flour and baking powder into the bowl.
  3. Add the milk to the bowl and carefully mix until smooth.
  4. The batter should be a little runny, but not a viscous liquid.
  5. Add a tablespoon of oil into a heated pan and pour in the batter.
  6. Cook for 2-3 minutes on each side, or until golden brown.
  7. Serve with maple syrup and fruit.
