This is a sister recipe to my waffles. It’s your shortest path to delicious pancakes, made from a pretty versatile batter. It’s a great way to use up leftover bananas and an even better way to start your day.
Prep time: 5 minutes
Cooking time: 10 minutes
Ingredients for 4 medium pancakes
- 100g all purpose flour
 - 2g salt
 - 125ml milk
 - 3.5g baking powder
 - 1 large banana
 - 2 tablespoons oil/vegan butter to fry on
 
Optionally add
- maple syrup topping
 - strawberries or other fruit
 
Steps
- Mash the banana in a bowl.
 - Sift the flour and baking powder into the bowl.
 - Add the milk to the bowl and carefully mix until smooth.
 - The batter should be a little runny, but not a viscous liquid.
 - Add a tablespoon of oil into a heated pan and pour in the batter.
 - Cook for 2-3 minutes on each side, or until golden brown.
 - Serve with maple syrup and fruit.
