Ingredients for 1 tray

  • 250g All Purpose Flour
  • 100g Brown Sugar
  • 4g teaspoon Baking Soda
  • Pinch of Salt
  • Light grating of Nutmeg
  • 1 teaspoon of Cinnamon
  • 180 ml plant based milk
  • 60ml vegetable oil (canola, sunflower, melted vegan butter)
  • 5g Vanilla Extract
  • 30g Apple Sauce / Finely grated apple

Steps

  1. Sift the flour, baking soda, salt, nutmeg, and cinnamon into a bowl.
  2. Add the sugar and mix well.
  3. Add the milk, oil, and vanilla extract to the bowl.
  4. Add the apple sauce to the batter and mix well.
  5. Divide the batter into as many muffin cases as the batter will fill.
  6. Bake at 180°C for about 20 minutes, or until a skewer comes out clean.
