I will gladly be the first to admit that a lot of my recipes lately have been looking a little beige. But no matter! This is a classic Hungarian comfort food. I bought the dumplings pre-made, but you can make them yourself. They’re quite simple. I might have a recipe for them soon.

Cooking time: 1 hour
Ingredients for 5 servings
- 500g sauerkraut
- 3 onions
- 2 cloves of garlic
- 2 bay leaves
- 1 tbsp dried marjoram
- 300g vegan strips
- 2 tbsp tomato paste
- 2 tbsp flour
- 2 tbsp paprika
- 2 tbsp neutral oil
- 3g caraway seeds
- 1 liter vegetable stock, or water and bouillon
- splash of white wine
Steps
- Chop the onions and garlic. Heat the oil in a large pot and sauté the onions until translucent.
- Add the garlic, caraway seeds, and paprika. Stir for a minute. Then deglaze with a splash of white wine.
- Add the tomato paste and flour. Stir for another minute.
- Add the sauerkraut, strips, marjoram, bay leaves, and vegetable stock. Bring to a boil, then reduce to a simmer.
- Simmer for 1 hour, making sure to stir occasionally. Add more stock if it gets too dry.
- Salt and pepper to taste.
- Serve with dumplings or bread.
