I will gladly be the first to admit that a lot of my recipes lately have been looking a little beige. But no matter! This is a classic Hungarian comfort food. I bought the dumplings pre-made, but you can make them yourself. They’re quite simple. I might have a recipe for them soon.

Prep time: 15 minutes

Cooking time: 1 hour

Ingredients for 5 servings

  • 500g sauerkraut
  • 3 onions
  • 2 cloves of garlic
  • 2 bay leaves
  • 1 tbsp dried marjoram
  • 300g vegan strips
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 2 tbsp paprika
  • 2 tbsp neutral oil
  • 3g caraway seeds
  • 1 liter vegetable stock, or water and bouillon
  • splash of white wine

Steps

  1. Chop the onions and garlic. Heat the oil in a large pot and sauté the onions until translucent.
  2. Add the garlic, caraway seeds, and paprika. Stir for a minute. Then deglaze with a splash of white wine.
  3. Add the tomato paste and flour. Stir for another minute.
  4. Add the sauerkraut, strips, marjoram, bay leaves, and vegetable stock. Bring to a boil, then reduce to a simmer.
  5. Simmer for 1 hour, making sure to stir occasionally. Add more stock if it gets too dry.
  6. Salt and pepper to taste.
  7. Serve with dumplings or bread.
