Kicking off the new year with a very fitting recipe for puff pastry snails. These are a great snack to serve at a party. They tasted like lasagna, so take that as you will :).

Prep time: 10 minutes

Cooking time: 20 minutes

Ingredients for… so many snails

  • 1 puff pastry sheet
  • 1/2 can of chopped tomatoes
  • 1/2 block vegan cheese, grated coarsely
  • 2 tbsp mixed herbs (I used basil and oregano)
  • 2 tsp salt
  • 1 tbsp sesame seeds

Steps

  1. Preheat the oven to 200ยฐC.
  2. Mix the tomatoes, herbs and salt in a bowl.
  3. Roll out the puff pastry sheet and spread the tomato mixture on top.
  4. Sprinkle the cheese on top and roll up the pastry sheet starting from the long side.
  5. Cut the roll into ~1cm thick slices and place them on a baking tray lined with parchment paper.
  6. Sprinkle the sesame seeds on top and bake for 20 minutes or until golden brown.
