Kicking off the new year with a very fitting recipe for puff pastry snails. These are a great snack to serve at a party. They tasted like lasagna, so take that as you will :).

Cooking time: 20 minutes
Ingredients for… so many snails
- 1 puff pastry sheet
- 1/2 can of chopped tomatoes
- 1/2 block vegan cheese, grated coarsely
- 2 tbsp mixed herbs (I used basil and oregano)
- 2 tsp salt
- 1 tbsp sesame seeds
Steps
- Preheat the oven to 200ยฐC.
- Mix the tomatoes, herbs and salt in a bowl.
- Roll out the puff pastry sheet and spread the tomato mixture on top.
- Sprinkle the cheese on top and roll up the pastry sheet starting from the long side.
- Cut the roll into ~1cm thick slices and place them on a baking tray lined with parchment paper.
- Sprinkle the sesame seeds on top and bake for 20 minutes or until golden brown.
