Not sure how to describe this recipe. I usually make this because of how incredibly filling it is. It’s also very simple to make. Italians look away!

Prep time: 5 minutes

Cooking time: 5 minutes

Ingredients for 1 serving

  • 250g dry pasta
  • 1 block of tempeh
  • 1/2 onion (red is better)
  • 1 clove of garlic
  • can of chopped tomatoes
  • 1 medium sweet potato
  • 1 teaspoon olive oil
  • a healthy amount of spinach
  • salt and pepper to taste

Steps

  1. Heat the oil in a large pan over medium heat.
  2. Add the onion and cook until the onion is translucent.
  3. Add in the tomatoes and stir around.
  4. Add in your sweet potato and pasta and stir around.
  5. Put the lid on and cook until the pasta is done.
  6. Add in the spinach and stir around until it wilts.
  7. Serve with some nutritional yeast on top.
