Not sure how to describe this recipe. I usually make this because of how incredibly filling it is. It’s also very simple to make. Italians look away!

Ingredients for 1 serving
- 250g dry pasta
- 1 block of tempeh
- 1/2 onion (red is better)
- 1 clove of garlic
- can of chopped tomatoes
- 1 medium sweet potato
- 1 teaspoon olive oil
- a healthy amount of spinach
- salt and pepper to taste
Steps
- Heat the oil in a large pan over medium heat.
- Add the onion and cook until the onion is translucent.
- Add in the tomatoes and stir around.
- Add in your sweet potato and pasta and stir around.
- Put the lid on and cook until the pasta is done.
- Add in the spinach and stir around until it wilts.
- Serve with some nutritional yeast on top.
